It’s that time again, time to review. This week I made Antipasto Pizza, Canapes a L’amiral, Roasted Red Pepper and Tomato Soup, topped a left over crab cake with an egg, picked really long asparagus spears and enjoyed some focaccia made by a friend. What are you making?
I had the extreme pleasure of having breakfast with my friend Nina at Ken’s Creekside which has your typical gorgeous Sedona views and a lovely patio area that makes you feel like you are dining out in nature.
Being a die hard Marylander raised on blue crab I was a little skeptical about the idea of a crab eggs benedict. I’d never had it prepared that way before. (I’ve been debating on trying it for awhile now) It was so good!!!!!!! That egg is sitting on a massive crab cake. It came with grilled focaccia bread and thyme potatoes. Nina got a breakfast omelette quesadilla that came with sour cream and fresh salsa which was beautiful as well. Yum! Cheers to many more amazing meals!
No Bake Nutella Cheesecakes
Yield: 4-6 servings
Prep Time: 15 minutes
Ingredients:
For the Crust
12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, meltedFor the Filling
1 (8 ounce) package cream cheese, softened
2/3 cup Nutella
1 teaspoon pure vanilla extract
1 (8 ounce) tub frozen whipped topping, thawedFor the Garnish
whipped topping, optional
chocolate shavings, optional
toasted, chopped hazelnuts, optionalDirections:
1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well blended and no streaks remain.
3. Evenly pipe or spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. If desired, garnish with additional whipped topping, chocolate shavings, and/or toasted, chopped hazelnuts.
Mediterranean Tuna Salad Wrap
Wrap sandwiches, no matter the filling, are a quick and tasty dinner. This version is a healthy, vegetable-packed tuna salad with capers and fresh herbs.
